
Creamy Muenster Mac with Spinach
Serves 4
Ingredients:
1 tablespoon butter
1 teaspoon garlic, minced
1/4 cup green onions, minced
2 tablespoons flour
2 cups milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup chopped Wisconsin Muenster Cheese
1/3 cup grated Wisconsin Parmesan Cheese
2 cups chopped fresh spinach
4 cups cooked elbow macaroni (approximately 2 cups uncooked)
1/2 cup Italian or plain breadcrumbs
Directions:
Preheat oven to 350°F. Melt butter in a saucepan over medium heat, adding garlic and onions.
After one minute, add flour, stirring continually. Whisk in milk, salt and pepper, bringing mixture to a boil.
Allow to boil while whisking for approximately 2 minutes, until sauce is thickened. Lower heat and add
Muenster Cheese and Parmesan, stirring constantly until cheese is fully melted and mixed. Add spinach
and cooked macaroni to cheese mixture, stir until pasta is fully coated in cheese sauce.
Spray 2-quart casserole dish with cooking spray. Pour macaroni into casserole dish and top with breadcrumbs.
Bake for 15 minutes. Allow to cool for five minutes and enjoy!
